Since we shared Dad’s Wing Recipe last week, it only seems fitting to next share a recipe that is from our mom. A good little appetizer makes a day of watching football all that much better:) If you are anything like us, Guacamole is practically it’s own food group. Perhaps you like to lie to yourself as well and justify the obscene amounts of avocados that you eat by saying, “It’s good fat”…..Well if this at all sounds familiar then this is the recipe for you!
Mom’s Guacamole
Serves 2 Cups
- 2 ripe avocados, peeled and pited
- 2 Tbs freshly squeezed lemon or lime juice
- I Tbs Minced Onion
- 1 clove garlic, peeled
- ½ tsp chili powder
- ½ tsp salt
- A few drops of hot red pepper sauce
- 1 Ripe tomato; peeled, seeded and diced (optional)
- ½ cup cooked, crumbled bacon (optional)
In a food processor or blender, process the avocados until smooth. If you do not have a blender or a food processor just mush up the avocados till smooth or till desired texture. Add the lemon or lime juice, onion, garlic, chili powder, salt and pepper (hot) sauce. Process for a few seconds longer until the mixture is smoothly blended. If desired, stir in the tomato or bacon and serve!
